Cream Cheese Brownies

1/2 cup butter
4 oz chocolate
4 eggs
1/2 tsp salt 2 cups sugar
1 tsp vanilla
1 cup sifted flour
8 oz softened cream cheese
1 cup chopped pecans or walnuts


Note: For lighter brownies use semi-sweet chocolate or for sinfully delicious ones use unsweetened chocolate

Preheat oven to 350. Lightly grease and flour a 9 x 13 inch baking pan & set aside.

Melt butter & chocolate in double boiler over hot water or in microwave at MEDIUM 50% just until softened--stir to melt entirely; cool

In a large mixing bowl beat eggs and salt until light and lemon colored. Beat in sugar and vanilla. Add cooled chocolate mixture and cream cheese and beat to combine.

With a wooden spoon or spatula, stir in flour just to moisten. Stir in nuts.

Pour batter into prepared pan. Bake about 25 minutes or just until center has set. Do not overbake.

Let cool and then cut into squares. Makes 30 brownies (or 1 great big one)
