Sugar Cookies

1 1/2 cups all-purpose flour
1 tsp baking powder
1/2 cup unsalted butter
1/2 cup sugar
1 egg (at room temp)
1 tbs brandy (2 if you like a bit more flavor)
1/2 tsp cinnamon mixed with 1/4 cup sugar


Sift together flour and baking powder.

Beat butter with sugar until soft and fluffy. Add the egg and brandy and mix until everything is nice and smooth. Fold in flour mixture until just blended to make a dough.

Chill for 30 minutes.

On a lightly floured surface roll out dough to about 1/8 inch thick. (I use a tupperware pastry mat on the bottom and waxed paper on top). Sprinkle top with the cinnamon-sugar mix and then cut the dough into squares, triangles, diamonds, or whatever strikes your fancy at the moment.

Place cookies onto ungreased cookie sheets and bake 10-12 minutes at 350. Allow cookies to cool on sheets for about 5 minutes and then transfer to wire racks to cool completely.
