1 tsp ground cinnamon 1/2 tsp ground nutmeg 1/8 tsp ground cloves 1 1/2 cup rolled oats 1/2 cup shredded coconut 1/2 cup chopped nuts |
Cream together butter & sugar. Beat in eggs. Add pumpkin & vanilla. Sift together flour, baking powder, baking soda, and spices. Stir into creamed mixture. Add oats, coconut, & nuts. Drop by teaspoonfuls 2" apart on greased cookie sheet. Bake at 375 for about 12 minutes. Remove cookies to rack & let cool. |
