CRANBERRY NUT BREAD

This recipe comes from the back of a bag of frozen cranberries

2 cups all-purpose flour
1 cup sugar
1 1/2 tsp baking powder
1 tsp salt
1/2 tsp baking soda
3/4 cup orange juice
1 TBS grated orange peel
2 tbs shortening
1 well beaten egg
1 1/2 cups fresh or frozen cranberries, coarsely chopped
1/2 cups chopped nuts



Preheat oven to 350 F.
In a bowl mix together flour, sugar, baking powder, salt, and baking soda.
Stir in orange juice, orange peel, shortening, and egg. Mix until well blended.
Stir in cranberries and nuts
Spoon into greased 9 x 5 inch loaf pan. An alternative is to line the pan with heavy duty foil.

Bake for 55 minutes or until a toothpick inserted into the center comes out clean
Cool on rack for 15 minutes and then remove from pan.
